Owasso was fortunate enough to have it first.  Then two years ago Jack decided to share the flavor by opening  a location on Riverside in Tulsa. Now the love of the Build your own Burrito and more will be spread a little further as the Baja-style Mexican food favorite Baja Jack’s Burrito Shack will open a new location on the University of Tulsa campus in late August.

Jack Coleman, owner of the two existing Baja Jack’ said this new location will be the first franchised unit for the concept and will be operated by SODEXO as one of the food court options in the Allen Chapman Activity Center. “SODEXO and TU both believe in our fresh food approach and this location will operate like our other two using the same recipes, same preparations, same salsa bar, and the same Baja California feel,” Coleman said. “Baja Jack’s will be the first local restaurant in the TU food court, and we’re excited that SODEXO and TU chose a local company to go along with the other options like Chick-fil-A, Subway, Pizza Hut and Einstein Bagel Company.”

 

You do not have to go to school or work at TU to enjoy the food. The new location will be open to  both students and the general public.

 

Salsa BarThe TU loation will carry most of the menu Jack’s fans are familiar with, including the ever-popular BYOB (Build Your Own Burrito). “It’s a staple of our menu and priced so that college kids can eat well,” said Coleman. Other perennial favorites like the Holy Guacamole, tacos, and other burritos will also be available at the Chapman Center location.

 

Jack’s menu is based on fresh ingredients and marinated meats in place of heavy sauces and ground beef, and is heavily influenced by the produce, meats, and seafood available in Baja California. Baja Jack’s also features seven different salsas, all made fresh in the restaurant. The House salsa and Mango salsa are the two most popular, but Coleman recommends customizing flavors and exploring new combinations. Some of his favorites include the smoky-flavored Chipotle salsa with carnitas pork, the citrus flavors of the Cilantro-Lime salsa paired with shredded chicken, or one of the famous fish tacos with Mango salsa.

When Jack Coleman moved to Tulsa from southern California he missed the SoCal taco shop tastes he’d grown up on. He decided to do something about it and opened the first Baja Jack’s Burrito Shack in Owasso in 2008. People embraced the restaurant’s fast casual, fresh-first vibe and Coleman opened a second location in south Tulsa in 2012. Summer 2014 marks the opening Coleman’s first franchised Baja Jack’s location and third location overall on the University of Tulsa campus.
